I've been wanting to make a fritatta for the longest time. Maybe it's because I like eggs. Maybe it's because I like the idea of throwing a bunch of ingredients together and letting it work for me. Maybe it's because it kind of rhymes with pinata, and who doesn't like those?? Regardless of the reason, it was time to make them. As I started to prep my ingredients and gather my tools, I realized that I didn't have an oven safe saute pan. This thinking brought me to my knees... literally... as I got down and began to examine my inventory of oven safe pans. Then I caught sight of the muffin tin, and heard a tiny voice say, " How about mini fritattas?" (This was obviously my subconscious and not the muffin tins. Muffin tins don't talk.) Miniature versions of things are charming and the more I thought about it, the more I was set on doing it.
I purchased some of my favorite ingredients to add to these little cylinders of eggie goodness. I even let Mike make one and his was delicious! The diagram above (with the perfectly drawn circles!) shows the combinations that I chose to make. I plan on making these again with ingredients like ham, caramelized onion, avocado, gruyere, and maybe even some broccoli.
Mini Fritattas adapted from Food Network.
ingredients found in your kitchen...
8 large eggs
1/2 cup whole milk
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
assorted mix-ins of your choice
cheese of your choice (optional)
Now what to do with those ingredients...
Preheat your oven to 350. Spray two (6 cup) muffin pans with nonstick cooking spray. Whisk the eggs, whole milk, salt and pepper in a large bowl and distribute the mixture evenly among the cups. Add about 2 tablespoons of your favorite mix-ins to each cup then sprinkle with cheese, if you like. Bake the fritattas until they are puffy and the edges are golden brown, about 20-25 minutes. You can use a butter knife to loosen the egdes before removing them from the pan. Serve right away, these are best when they're steaming as you cut them open. This makes about 12 mini fritattas.


I haven't tried fritattas before. I think I'll cook this over the weekend. Thanks for sharing the recipe.
